Unlike most spirits, which strive for consistency in flavor year to year, Tequila Ocho borrows a concept from fine wines by offering vintages.

The company plans on harvesting blue agave from a different estate each year, which will result in the variation of flavor. Though their blue agave-sourcing method is unusual, this Mexican distillation is handcrafted through traditional means, such as slowly cooking the blue agave in a stone oven and utilizing open-air fermentation in wood casks. Tequila Ocho is offered in three styles; plata (aged for less than two months), reposado (aged from two months to a year) and añejo (aged for a year to three years). Adding to the tequila's collectable appeal, the bottles are numbered by hand and stamped with the estate name along with the vintage.
