This swanky spa and golf resort resides in a tony North County location.

Fairmont Grand Del Mar, San Diego

Nestled in a 4,100-acre expanse in the hills of Los Peñasquitos Canyon Preserve just east of the San Diego coastline, this palatial hotel lives up to its grand title. Everything about the resort shows an attention to quality and details. During the construction, over 800 workers, contractors and craftspeople put in more than a million hours to create the property's final look. The hand-stenciled and painted decorative ceilings throughout the resort took 24 people three months to complete. Other highlights include more than 25,000 square feet of handcrafted wood floors, over 30 different types of stone and polished Italian marble, gilded wood accents, Venetian-plastered walls, hand-hewn wood beams and more than 50 elaborate chandeliers.

The Fairmont Grand Del Mar is a destination resort, not just for avid golfers — who are bound to spend the majority of their time on the magnificent, Tom Fazio-designed, 18-hole course — but also for those who seek to indulge in horseback riding. On the grounds is a 20,000-square-foot, 8-stall equestrian center with tack and feed rooms and an expansive riding area, not to mention trail horses and ponies. Guests can ride (or hike) along the 37-mile expanse of trails in the canyon; they can also practice their backhand on the pro tennis courts, swim in one of the four pools, or indulge at the contemporary, Renaissance-inspired, 21,000-square-foot spa with 11 treatment rooms.

The architecture here is fashioned after the grand villas of Italy, France and Spain, as adopted by American architect Addison Mizner (for whom the house restaurant is named). This is the backdrop for the 249 guest rooms and suites, outfitted with goose down-topped beds, Italian marble bathrooms, oversize tubs, mini-bars and flat-screen TVs. This style also extends to the hotel's restaurants, beginning with the signature Addison, one of GAYOT Top 40 Restaurants in the U.S., set off on a hill overlooking the hotel and golf course. Here, the team of chef William Bradley and an esteemed group of sommeliers offer a one-of-a-kind sensory experience, arguably the best dining in the San Diego area. In addition, Amaya Restaurant serves distinctive Mediterranean-style fare, and The Clubhouse Grill specializes in Southern California-inspired tapas.

Business travelers will enjoy the combination of luxury and practicality: meeting facilities boast 20,000 square feet of function space, including the latest audio/visual technology. Then there is the resort's centerpiece, the Elizabeth Capella, a Mediterranean-style chapel with expansive windows and limestone and marble floors, where families and groups can come together to celebrate special occasions and weddings.
