Still glimmering after more than 15 years, Jardinière in San Francisco serves as a sort of keyhole into all that’s good and fun about high-caliber California-French dining. Owner and chef Traci Des Jardins was a strong advocate for responsibility and seasonality in cooking long before local, organic and sustainable became buzzwords.

As a restaurateur, she’s spearheaded concepts like Mijita, Public House, The Commissary and Arguello.
