Saison is an earthy, spiced bottle-conditioned ale from the Flemish countryside traditionally brewed to drink in late summer’s harvest season.  A hard style for American brewers to master, one of the best is Saison Athene, from the Tampa Bay area, whose depth and substance pushes its pairing possibilities well into the fall season.  Florida may be far off the beaten craft-beer track, but Saint Somewhere’s stately 25 ounce bottles and art nouveau-inspired labels are well worth looking for.  This Saison has an opalescent burnt orange color and throws a vigorous sticky head.  Herbal saffron and sage aromas mingle with apple, apricot and granola notes on the nose.  A sip reveals a drier flavor than expected, layered with baking spice and finishing with a slight lemony tartness that suits simple roasted chicken or firm aged cheeses.
