Flying Dog puts a new spin on the old English tradition of pairing beer with oysters by adding shellfish directly into this stout. The brewery uses locally harvested Rappahannock River oysters, which add a subtle saltiness to the aftertaste. Roasted barley and chocolate rye are responsible for notes of chocolate, roast and coffee on the palate. Originally released as a limited-edition beer in 2011, Pearl Necklace Oyster Stout is now produced and sold year-round. Here's to drinking to a good cause: Proceeds from the sale of this beer benefit the Oyster Recovery Partnership of the Chesapeake Bay.
