Pioneering co-owner/executive chef Dan Barber opened Blue Hill in a small subterranean space adjacent to Washington Square Park in Greenwich Village way back in 2000, before the farm-to-table movement had gained mainstream momentum. Diners can order à la carte or enjoy the five-course farmers' feast. Barber's other restaurants include former Top 40 selection Blue Hill at Stone Barns, which is located on an actual working farm.
