Charlie Trotter is known as a perfectionist. How else can you describe a chef who can write a whole cookbook on one type of ingredient (vegetables, seafood), an entire guide on knife skills or simply a book on the concept of excellence? His eponymous restaurant is creeping up on a quarter-century but shows no signs of age. Foodies still flock to Trotter's unassuming Lincoln Park brownstone for contemporary American cuisine—and never get served the same dish twice!
