The unusual name? That's L20 as in H20, a playful take on chef Laurent Gras' first initial substituted in for 'H' in the chemical compound for water—it's a seafood restaurant. Conceived to be Chicago's answer to Le Bernardin, it's also the Windy City's first exposure to French-born Gras, who is much more familiar to New York and San Francisco diners. Expect a molecular gastronomy approach melded with French and Asian influences.
