A French chef to the core, Guy Savoy was among the group of avant garde toques who pioneered the Nouvelle Cuisine movement; they eschewed heavy sauces in favor of a lighter hand in the kitchen. In a restaurant whose architect's resume also includes parts of the Louvre, one expects the cuisine to meet certain standards; here they are exceeded. The wine list is impressive as well, weighing in at 2,000 bottles.
