Chef-owners Mark Gaier and Clark Frasier were sustainable mavericks decades before locavores hit the zeitgeist, and their über-romantic eighteenth-century farmhouse restaurant remains a testament to their beliefs. Ninety-percent of their produce is grown in the restaurant’s organic garden, while wild mushrooms and fiddlehead ferns are foraged in nearby forests. These, and other French country traditions, including the production of cheese and charcuterie in-house, result in a vibrant New American cuisine that has made Arrows a premier fine dining destination.
