A chef revered by fellow chefs, Boulud has gone on to plant his culinary flags in outposts around the globe from London to Beijing, with no sign of tiring; his new db bistro moderne just opened in Singapore, and two new Manhattan locations — Boulud Sud and Epicerie Boulud — opened in 2011. His Bowery burger joint belies his fine dining background, offering haute beef with as much imagination as his posh uptown eatery, but with prices reflecting the lingering recession.
