In Chicago, Grant Achatz's Lincoln Park restaurant is the true mecca of American molecular gastronomy. Adventurous guests settle in for an experiential evening that features a dramatic sixteen- to eighteen-course dinner so avant-garde that the staff needs to offer instructions on eating some of the dishes. Achatz's second Chicago establishment, Next Restaurant, is nearly as provocative since there are no reservations taken and every seat must be bought in advance with a ticket online.
