While the giant chandeliers and boldly patterned flowered décor of this dining room may hearken back to the grand resorts of yesteryear, Greg Vassos’ ambitious, sophisticated menu combines the classic, the modern and the molecular. L’Escalier is French for staircase, and this is some of Florida’s most transcendent haute cuisine. Accordingly, there is liberal use of foie gras and truffles, but Vassos’ dishes also may offer sly tastes of olive oil brittle, cherry bomb radishes and carbonated guava.
