The Cosmopolitan of Las Vegas recently hosted the inaugural All-Star Cochon, bringing together leading chefs, butchers and 14 different heritage breed pigs for the best of all things pork. A snout-to-tail menu was prepared by the chefs, which showcased over forty unique pork dishes like proscuitto cotto tremazzini and braised pork & peanut soup. The event also featured cured meats, a butchery demonstration, craft brews, cocktails and a variety of pig-infused desserts such as the bacon-in-the-batter waffles, bacon cotton candy and pork belly + pineapple tarte tatin.
Participating chefs included Mary Dumont of Harvest, the 2011 “King & Queen of Porc” Duskie Estes & John Stewart of Zazu, Devin Knell of French Laundry, Mark Ladner of Del Posto, Michael Sullivan of Blackberry Farm, John Sundstrom of Lark, Andy Ricker of Pok Pok, the 2010 “King of Porc” David Varley of Michael Mina, the 2011 Denver Cochon 555 winner Alex Seidel of Fruition, Jamie Bissonette of Coppa and the 2008 winner of Top Chef Stephanie Izard of The Girl & The Goat.
To provide even more variety, several of the Cosmopolitan’s restaurants: Blue Ribbon Sushi Bar & Grill, China Poblano, Comme Ça, D.O.C.G, Estiatorio Milos, Holsteins, Jaleo, STK, Scarpetta, and Wicked Spoon, served small plates, most of which were pork-free. The chefs spoke about their creations, including Scott Conant, chef/owner of Scarpetta and D.O.C.G. and Stephen Hopcraft, executive chef of STK, while the guests pigged out!
