Tasting Notes: The Cattier family have owned vineyards in Champagne since 1763, but it was not until 1918 that they began producing sparkling wines under their own name. (Since 2006, they have also produced the premium Armand de Brignac brand.) Designed as a tribute to the village of Chigny-les-Roses, where Maison Cattier is located, the Brut Blanc de Blancs Les Roses is a non-vintage offering packaged in a colorful floral bottle. Tasting Notes: Founded in 1846 by two brothers, Jules and Auguste Devaux, the brand remained in the family until 1987. At that time, Jean-Pol Auguste Devaux ensured that the brand would continue by giving it to the Union Auboise, a cooperative of Champagne growers located mostly in the Côtes des Bar. Devaux’s portfolio comprises a variety of Champagnes, including the Classiques, the Collection D and two made entirely from Pinot Noir. The house’s finest offering, the D Millésimé 2002 is composed of equal parts Pinot Noir and Chardonnay. Since the video interview above is with Richard Geoffroy, the Chef de Cave at Dom Pérignon, I will let him speak about the wine that was exclusively served at the Sun King (Louis XIV)’s court, and that we drink and even spray on each other to celebrate. Champagne bien sûr!

Every once in a while we have the chance to catch up with Richard Goeffroy, Chef de Cave extraordinaire at the fabled Abbey of Hautviller’s Dom Pérignon and France’s master Champagne producer. Real life people like Marilyn Monroe and fictitious characters such as James Bond have loved and publicized DP since the 1950’s, and we’d like to continue that tradition humbly.
It’s a rather easy task, however, considering the products we sampled during a “casual” lunch: we’re talking lobster and foie gras at the Polo Lounge in Beverly Hills with Richard and Dom Perignon Ambassador Nicole Ruvo. The entire experience was magical and ethereal and priceless considering the company and the two bottles we sampled.
