Tasting Notes: Named after the Greek word for yeast, Azienda Agricola Zyme was founded in 2003 by Celestino Gaspari. Of the 16 hectares that supply grapes to the Zyme, some belong to the Gaspari family, while others are farmed in cooperation with their owners. The winery’s caves are conveniently located deep underground in a 15th century sandstone quarry, providing excellent conditions for extended aging. Made in the traditional manner from partially dried grapes, the 2006 Amarone della Valpolicella is an unforgettable wine. Given enough time to open up, it exhibits fragrant aromas of black cherry, plum and raisin with hints of mint, nutmeg and rose petals. Concentrated fruit flavors, vibrant acidity and sturdy tannins give the wine a massive mouthfeel that highlights its alcoholic potency.
