Cat Cora's Classics with a Twist - Cookbook Review
Fresh Takes on Favorite Dishes
by Cat Cora
(Houghton Mifflin Harcourt, 2010)
From Iron Chef America's Cat Cora comes Cat Cora's Classics with a Twist, an easy-to-follow cookbook inspired by Cora's home life cooking for her four young boys. Her "Twist Its" approach boils down to adding creative, easy touches to favorite meals in order to give them that extra memorable oomph. You'll find both casual recipes that look like they were labor-intensive but were fast and easy to make and healthy dinners for weeknights with her unique twist: Asian salmon loaf with wasabi mayo; crustless quiche; minestrone verde; and jerk-rubbed pork chops.
Instead of the standard tomato soup with grilled cheese pairing, Cora suggests adding fresh cilantro to the sandwiches before cutting them into small "croutons" to put in the soup. Her recipe for fettuccine with scallops, lime and avocado is already pretty creative, but for really daring chefs, she recommends you first flambé the scallops in tequila!
Cora also provides tips on the best way to use store-bought ingredients so you can make the meal look and taste homemade, even when you're really rushed. She also offers several slightly more time-intensive recipes. And for the days when you can really devote yourself to cooking, the colorful tome can show you how to juice tomatoes, roast nuts and even grill avocados.
Also included are methods to cut calories in traditional dishes and ideas for how to use leftovers from last night's dinner to create a new meal for tonight or to liven up tomorrow's breakfast. Cat Cora's recipes are healthy, delicious and sure to please your family and a crowd of dinner guests alike.
