We love things that make our lives easier — especially in the kitchen. With Vita-Mix’s Vita-Prep 3 blender, you can purée, blend, juice, chop and grind through some of the toughest ingredients. Its 64-ounce capacity polycarbonate container makes it convenient and versatile, and now with the Vita-Mix 1363 CIA Professional Countertop Blender with 2+ HP motor available for consumers, you can use one in your own kitchen for a multitude of purposes, from entertaining large parties with margaritas and piña coladas to blending carrots and peas for your little one.

The Vita-Prep 3’s powerful three-peak horsepower motor makes it strong enough to cut  tough foods, saving you on prep time, since there is no need to chop ingredients into smaller pieces before use. Clean-up is simple, too — all you have to do is fill the container halfway with water, add a drop of dishwashing soap, run for a minute and then rinse it clean.

The blender even comes with a book with tips, techniques and recipes with ideas for appetizers, dips, soups, salsas, pestos, butters, salad dressings, sauces, batters, desserts — such as the Black & White Cheesecake and Chocolate Truffles — and beverages, alcoholic or non. We’ve included one of our favorite Vita-Mix recipes, featuring the heart-healthy artichoke.

 

Artichoke and Roasted Red Pepper Soup Recipe

Yield: 6 1/2 cups (1.6 l)
Speed: Variable to High to Variable
Time: 6-7 minutes

Ingredients

1 1/2 cups (360 ml) low sodium chicken or vegetable stock
1 cup (240 ml) lowfat buttermilk
1/2 cup (80 g) chopped onions, sautéed
3 roasted garlic cloves
15-ounce can chickpeas, drained and rinsed (1/2 reserved)
15-ounce can artichokes, drained and rinsed (1/2 reserved)
1 cup (136 g) chopped roasted red peppers (reserved)
1/4 cup (15 g) parsley leaves (reserved)
1/4 cup (60 ml) extra virgin olive oil
salt and freshly ground black pepper, to taste

1. Place all ingredients, except reserved vegetables, into the Vita-Mix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and quickly increase speed to Variable 10, then to High.
4. Blend for 6-7 minutes.
5. Reduce speed to Variable 4 and remove lid plug. Add reserved ingredients through the lid plug opening.
6. Blend for an additional 10 seconds. Serve immediately.

Variation: to make this recipe dairy-free, substitute soy milk for buttermilk.
