Chocolate-Pineapple Dessert - Recipe
Dark Chocolate Dipped Pineapple with Pistachio

A romantic, yet healthy treat, this decadent-tasting dessert provides the health benefits of dark chocolate (in small amounts) along with the antioxidants found in fresh pineapple, in season during the winter months. (Tip: Be sure to use high-quality dark chocolate made from cocoa butter, not hydrogenated fat.)
Ingredients:
1 fresh, ripe Hawaiian Gold pineapple
6 oz. dark chocolate, 60-80% cocoa
3 Tbsp. pistachios, chopped
Directions:
1. Cut rind off pineapple, core, and cut into 12 spears.
2. Melt chocolate in glass bowl in microwave for 45 seconds at a time, until melted, being careful not to burn.
3. Cover baking sheet with parchment paper, spray lightly with non-stick spray. Dip one half of pineapple spear in melted chocolate, place on baking sheet and sprinkle with chopped pistachio.
4 . Refrigerate until ready to serve.
5. To serve, let stand at room temperature for 15 minutes for maximum flavor.
