Roasted Asparagus with Chili Vinaigrette

Green Asparagus

Spring arrives this month, along with succulent and tender asparagus. High in vitamin K, folate, vitamin C and phytonutrients, this delicate vegetable is wonderful roasted with an Asian vinaigrette that can be served warm or cold!

1 1/2 lbs. asparagus
1 Tbsp. olive oil
Sea salt and fresh pepper to taste
1 1/2 Tbsp. soy sauce
1 tsp. pepper
1 1/2 Tbsp. sugar
1 Tbsp. sesame oil
1 tsp. chili oil
2 Tbsp. water
1/4 cup red wine vinegar
3/4 tsp. dry mustard
1 Tbsp. sesame seeds


  1. Preheat oven to 400 degrees F.  Trim ends off asparagus spears.  Place in bowl and toss with olive oil.  Season with salt and pepper.
  2. Place asparagus on baking sheet lined with parchment paper.  Roast 10-12 minutes.  Meanwhile, mix remaining ingredients in small bowl.
  3. Remove asparagus from oven and place on serving platter. Drizzle with vinaigrette while still hot.  Serve warm or at room temperature.
