They are also a value at the top end of the market. Try deep-fried salt and pepper squid with aïoli for a real taste kick, or Parma ham with figs for simply the best raw ingredients. A simple grilled côte de boeuf with classic bordelaise sauce and roasted celeriac or lobster ravioli with a tomato bisque sauce attest to the kitchen’s strengths, which is sourcing the best and giving it simple treatment.
