For example, 1111 grows vegetables in-house most of the year; their nearby building housing Vin de Set installed solar panels on the roof. Though it’s known for offering game --- the braised rabbit with wild rice pilaf and wild boar ravioli are longtime favorites --- the chefs get equally creative with vegetarian dishes like mushrooms with polenta and artichokes or oven-baked flatbread with poached pear, figs and Gorgonzola. The dessert menu’s centerpiece is gooey butter cake, a local concoction that’s perfect with a tall glass of milk to cut the rich sweetness.
