Diego Muñoz, who trained under Ferran Adrià and Gaston Acurio, launched 1111 Peruvian Bistro in Brickell. Joining him in the kitchen is executive chef Geancarlo Mayorga. The menu showcases old-world concepts and authentic Peruvian fare but with a modern twist and Asian influences. Expect classics like lomo saltado, Peruvian anticuchos (grilled octopus, veal heart and chicken livers), calamari jalea, and king crab and poached chicken causa, as well as mussels, and duck and prune terrine.
