Located in the haute Grand Hyatt Seattle, 727 Pine brings a level of sophistication to Seattle's hotel dining. Gracefully offering a full range of dining experiences, 727 Pine transitions from a lively, street-level bar to an opulent, multi-tiered dining room (with one table so perfectly perched you might want to ask for its number for future reservations), to an underground wine cellar and private dining room. The food and service in each of these venues is perfectly matched. In the bar, guests can get a great taste for the think global, cook local style of the kitchen. We like to start with lobster pot stickers; morel mushroom soup with the addition of tender halibut cheeks; or the delicious Study in Beets with roasted beets and blue cheese served on greens and dressed with vinaigrette. The Oregon rack of lamb is a favorite entrée, but (especially on cool winter nights) we can't resist the Snake River Farms Kobe beef with whipped Yukon Gold potatoes. Though it may sound odd, for dessert we like the Cream of Wheat fritter topped with cinnamon syrup, ginger-apple preserves and candied apple ice cream---breakfast at Mom's never tasted like this! The award-winning wine list is well chosen: let the down-to-earth sommelier elevate your dining experience with the perfect glass or bottle of wine. If you happen to drink too much, you can always get a room.
