Adobo Taco Company may want to present itself as just another taco joint, but the term joint does it a disservice. The colors are fashion-conscious, there are genuine Mexican artifacts on the walls and the menu clearly aims for a more upscale crowd. Sometimes it hits the mark. Dishes such as the crisp cylindrical chicharrón de queso (rolled, fried cheese) are unique in town, and a shrimp cocktail strives to emulate the Mexican seashore classic. Tacos with the specialty citrus-chile adobo sauce can be overly deferential to gringo tastes; but, remarkably, the marinated fish version is two fins up. We also liked the arrachera de chipotle, a proto-fajita with a just-punchy-enough chipotle chile sauce. When available, try an agua fresca, literally a fresh water, of tamarind---refreshing indeed.
