Father-and-son team Shane and Alex Chen operate the kitchen in this tiny establishment, which has a large, red-painted wall with golden branches meandering through the background. The Chens have evolved a personal style of cooking that's based on Taiwanese traditions, although these in turn have absorbed influences from all over China and even Japan. Start with an appetizer of handmade bao, or buns stuffed with a variety of proteins (one is vegetarian). We like the pork belly bao and the version filled with shrimp. Small, shareable plates include lu rou fan, a dish of minced pork with shiitake mushrooms, braised egg, fried shallots and cilantro --- a fascinating interplay of flavors. The duo makes Taiwanese sausage, too, but if you don't get there early it could be gone for the day. Try the chili oil wontons, full of pork and shrimp, and order a plate of the daily vegetable to balance your selections. Dessert does not occur here. Craft beers, sakés and a decent wine list make choosing a libation quite easy, but we prefer to bring our own wine (corkage fee is a mere $20).
