Hard Rock founder Peter Morton's family created the famous Morton's of Chicago steakhouse chain, and the beef here is of the same aged-to-perfection vintage. Add in the style of the Rat Pack ’60s-era Las Vegas, when guests dressed up to dine to the smooth sounds of a piano player, and you have the makings of a first-rate evening. The room is dressed with rich butterscotch drapes and butterscotch velour chairs, and the nine-seat bar is enhanced by a colorful glass wall. Fine cuisine turned out in the gleaming open kitchen starts with appetizers such as seared sea scallops with celery root, fennel and blood orange. Among entrées, we like the Dover sole with toasted almond and brown butter sauce and AJ’s version of short ribs---Guinness-braised and slow cooked for 31 hours---accompanied by pearl onions and garlic mashed potatoes. Among steaks are a ten-ounce filet mignon and 20-ounce bone-in Prime New York strip with the choice of blue cheese, béarnaise, red wine demi or peppercorn sauce. Among popular sides are roasted butternut squash and baked truffle mac ‘n’ cheese. Save room for the Grand Marnier-glazed seasonal berries over almond sponge cake baked with Grand Marnier crème. The extensive wine list and after-dinner drinks nicely complement the cuisine.
