Dimly lit and featuring rich dark wood with a cozy bar inside its entrance, the elegant al Dente has stood the test of time, despite all the newer, celebrity-chef-driven Italian eateries in most of the Strip hotels which surround it. Try the beef carpaccio with petite mâche, extra virgin olive oil and shaved Reggiano Parmigiano; and prosciutto-wrapped prawns with garlic, lemon and Reggiano aïoli for starters. Caesar salad with toasted olive bread is a staple, as are the minestrone and Roma tomato soup. Lemon-ricotta tortellini with fresh mozzarella and eggplant tomato sauce; seared diver scallops with a grilled polenta cake, ratatouille and a vegetable salad; chicken Marsala with pasta and zucchini noodles; and Australian lamb chops with porcini ravioli, baby mushrooms, spinach and Madeira sauce are among longtime favorites. Among signature desserts are tiramisu and melted chocolate cake.
