| He doesn’t smile at his guests or say much, but sushi chef-owner “Masa" rarely takes a night off, accounting for the consistent high quality of this stylish place's seafood. In addition to classic choices, Ambrosia's large list of sushi possibilities includes local fish and shellfish not often found in average sushi bars, like stone crab, conch, baby octopus, sweet shrimp, and true white tuna. Those who favor sushi that features the fish's own flavor should mostly stick to nigiri, as many makis, while crowd-pleasers for diners with Americanized tastes, are overwrought. But some makis do allow fresh seafood to shine, such as, during stone crab's October-May season, the Key West (stone crab, avocado, cucumber and masago) and the Hamachi Heat roll incorporating snow crab, hamachi and jalapeño tempura. There are also a few unusually interesting vegetarian makis, like the pristinely simple ume shiso (rich plum paste balanced by astringent fresh shiso leaf). The bar is a good choice for light dining or to focus on the wide selection of limited-edition boutique sakés from small-scale producers. Plus, the barstools offer the best view of the spacious, modern-designed room complete with glass waterfall and undulating steel walls. |
