Have you ever had a Vampiro, a grilled corn tortilla heaped with carne asada or pastor, then topped with melted Monterey Jack cheese, guacamole, sweet caramelized onions, and crisp shredded lettuce? If you’ve ever been to Culiacán, in the Sinaloa region of Mexico, you probably have enjoyed the delight. In the Valley, chef America Corrales brings us the flavors of her Culiacán hometown, served in a cozy, cheerful, colorful cottage where we can watch the cooks prepare each dish to order. The magic starts with the homemade corn tortillas, and then on to the tender, seasoned and grilled meat that is chopped for tacos, burritos, quesadillas and tortas. Steak is hard to resist, marinated in fragrant citrus and spices then grilled on an open-flame gas grill. But it’s best to order at least two dishes, so one can also explore the pastor, succulent pork spit-roasted on an authentic Mexican vertical rotisserie and hand-carved in juicy slabs.
