When Atelier opened in the posh Ritz-Carlton on Central Park, the command of the ovens was entrusted to young chef Gabriel Kreuther. Kreuther departed, and this candy box of a room with its blond sycamore paneling, light green banquettes and modern paintings finds itself in a transitional mode. Pastry chef Eric Hubert prepares superior desserts such as the chocolate millefeuilles with vanilla ice cream, strawberry sorbet and warm raspberries---a sheer delight. The wine list is serious. While it lasts, enjoy the delicate though not so well-known Rosé Champagne Goerg.
