Angus Brown and Nhan Le of Octopus Bar fame have opened 8 Arm. Breakfast and lunch patrons will be seated at a counter, while dinner guests will enjoy full table service. Brown will handle the latter mealtime with a small menu focused on vegetable fare. Chef Shuffle

Oak Steakhouse founding executive chef Eric Zizka will head north to Nashville to open the company's outpost of the restaurant in that city. Replacing him at the helm is Michael Perez, executive chef at Colletta, its sibling venue nearby. Perez will handle both establishments, with Oak sous chef Stuart Rogers, a founding team member, assisting. Oak Steakhouse, Avalon, 950 3rd St., Alpharetta, GA 30009, 678-722-8333.
 
Ford Fry has announced the departure of Wesley True as executive chef at The Optimist. True had gone to The Optimist from The Spence, now closed, after a brief tenure there, and lasted a bit more than a year at the helm. Pending the naming of a new chef, the corporate vice president of culinary operations, Drew Belline, will keep his hand on the stock pot. The Optimist, 914 Howell Mill Rd. Brandon Bailey, former chef de cuisine at Cakes & Ale in Decatur, has taken over the top spot at Billy and Kristin Allin's newest restaurant, Bread & Butterfly, following the departure of its original chef, Bryan Stoffelen. Bailey, who has worked with Daniel Boulud as well as at numerous Atlanta restaurants, will likely approach any menu changes very slowly. Shaun Doty has closed the Midtown unit of Bantam + Biddy and plans to reconfigure the space to open The Federal, which is scheduled to debut in November 2016. The concept will be wide ranging, with dishes from Doty's varied culinary experiences crafting a wildly eclectic menu.
