 While the Conrad's entire 25th floor now centers on dining venues (called, collectively, Level 25), Atrio, a dimly lit room offering a soothing vista of the twinkling city lights below, remains the hotel's top-end restaurant. The contemporary creations still have some Mediterranean and American comfort food touches. But these days most of those are to be found in the pintxos (Basque-style tapas) and other more informal fare at The Bar, Level 25's casual venue, while Atrio's dishes mostly reflect influences from Asia, Latin America, or both. Signature dishes include an ahi-vegetable roulade with tempura sesame fried rice, a Peruvian purple potato tuile, and a blood orange gastrique; oven-roasted Chilean sea bass with wasabi pepper sauce and teardrop tomato ceviche; and pan-seared yellowtail snapper with trout caviar beurre blanc, sugarcane skewers and tempura orchid.
