We'd love to keep this address only for ourselves, for fear that too many patrons would overwhelm the limited capacities of this handkerchief-sized bistro. Thus it is with reluctance that we reveal the whereabouts of Au Bois Doré (The Golden Wood) in hopes that its remote location near the Bois de Vincennes will be enough to keep the throngs away. Gems like this one are threatened by the galloping urbanization and the expansion of fast food chains, but at the helm is Norbert Hamel, a seasoned cook who nourishes a passion for real food. He is a strong keeper of the faith in serious family-style fare based on fresh products he buys daily from a nearby market. No frills here, just the real thing. Celery remoulade, marinated herrings with fingerling potatoes and tête de veau (calf's head) are just a few of the traditional, generously portioned appetizers and mains that are prepared with care. The fish, which is impeccably fresh thanks to local fish monger Monsieur Gilbert, is often served grilled à la plancha or in a light beurre blanc. The pork knuckle is tender and satisfying with the lentils du Puy, one of his best selections. A little nod to exotic can be found in the curried free range chicken or the Moroccan couscous. Jeanine the server is as sharp as can be whisking plates to tables with grace and high professionalism. You can't expect such plenitude at these prices.
