Begin with the l’indivia (organic endive, candied walnuts, pomegranate, apple and shaved pecorino). Move on to the saffron-flavored tagliatelle with rock shrimp, parsley and chili flakes. Your secondi should be il maiale (slow-roasted Berkshire pork belly with borlotti beans, black kale and caramelized apple). The sweet vanilla and caramel panna cotta is an apt finale.
