Since his early debut at Stateside, George Sabatino has been lauded as a whiz kid, and his first outing as restaurateur (he co-owns with his wife Jennifer) proves his vision goes much broader than his homemade pickles, butter and bread (though these are all very satisfying). The urbane atmosphere beckons with its tin ceiling, burnished floors and walls of windows overlooking Chestnut Street --- minimal but not stark. The fare, too, walks the line between modern/innovative and warmly homey with a strong, sure voice. Oysters en gelée with rhubarb ice is a novel presentation with bright flavor, while the chicken liver mousse showcases his touch with charcuterie. A second course might consist of carrot salad with green goddess dressing and peanuts, while the third course features duck breast with blistered shishito peppers, cherries and black garlic. (Vegetarians are accommodated nicely with fresh pastas.) For dessert, try the vanilla panna cotta with poached cherries and salty almonds. Jennifer Sabatino runs the beverage program that includes a small but enticing mix of European and American bottles, craft beers, simple yet on-point cocktails (gin with cucumber, mint and lime) and even a selection of house-made sodas for the teetotaler.
