What is the sound of one hand eating pancakes? At Al's Breakfast, the noble breakfast arts are practiced with the keen mind of a Zen master. People line up around the block if not to sit at the his feet, then at least to find a spot at his counter. Like a mystical mountain retreat, there isn't much to Al's---a dozen swivel stools, a stretch of yellow Formica, some hooks to hang your coat---but don't let the plain looks fool you. Because of its size, your order is cooked individually; your pancakes, so light, yet so toothsome, arrive too hot to eat. In the kitchen in back, another set of chefs worry over omelet and scramble orders, but we stick to the cakes---buttermilk, buckwheat, with fruit or without---and watch the cook work the griddle by the fogged-over window up front. Because it's often written up both locally and nationally Al's can be tough to get into, but we try to learn the lesson our wise sensei has to teach. In patience there is truth (at least when it comes to pancakes).
