About the restaurant: One of the few tasting-menu-only restaurants in Seattle, Altura asks its guests to trust the chef and share a culinary trip paved with luxury ingredients mixed with Northwest and Italian ideas. The hallway of a space on bustling Broadway hides what happens behind the marble counter in the open kitchen.

About the food: That's where chef Nathan Lockwood presents several courses along with inspired stuzzichini (small bites) like sea urchin cannoli with parsley root and pine. Expect to devote around three hours to the experience. A meal might progress with bone marrow roasted beets, risotto and asparagus tortelloni, before moving on to Columbia River king salmon with crispy artichokes and diavolicchio peppers. Desserts, such as mascarpone cheesecake with strawberry, olive oil and woodruff, also excel.

About the wine: Menus may be accompanied by wine pairings that won't disappoint, or select from the fine and fairly well-priced wine list featuring Italian selections. There are also a few craft beers and even flights of grappa.
