Using farm-fresh ingredients, many sourced from the nearby Union Square market, chef Jan Feshan creates seasonal dishes that highlight the simplicity and true taste of the products. Cauliflower soup shows up sans cream but with add-ons of raclette, red bell pepper and chili oil. Tuscan kale salad is a contemporary take on a Caesar and the apple salad presents a refreshing combination of sliced apples and candied walnuts. Pork belly is tender and rich, served in a natural jus. While Brussels sprouts are something found on every menu from Manhattan to Mars it seems, County’s version could easily be labeled a meal unto itself, dressed with mustard and rosemary vinaigrette and joined with bacon pieces and pickled onions. For dessert, try the pistachio ice cream with saffron and rosewater, the three flavors a surprising and welcome mix. Bread pudding with bourbon is a warm and satisfying choice. Creative cocktails are crafted with findings from the market, too, along with bitters, Amaros and liquors. We recommend the Candied Ginger Old Fashioned or the tart Vodka East Side (topped with absinthe). Californian and European wines by the glass are nicely varied with a Cabernet Blanc, Zinfandel and Syrah blend a standout.
