Scarcely more than two persons can fit into the front area of this Capitol Hill nano-bakery, where an L-shaped counter displays brightly colored macarons and crisp-cornered cookies. It also divides the minuscule customer area from the only slightly larger production space at the back of the sliver of a storefront on Olive Way. Started by, and featuring the recipes of, pastry chef Neil Robertson, Crumble & Flake marries traditional techniques and innovative flavors, pushing the envelope of how much butter one croissant can hold. Owner Toby Matasar carries on Robertson's practices with the perennial favorite, the smoked paprika and cheddar croissant, but sweets such as the raspberry “cheweo” are worth stocking up on before they disappear for the season.
