Din Tai Fung is a Taiwanese restaurant specializing in xiao long bao dumplings and noodles with more than 170 restaurants in 13 countries worldwide, including seven in California. At this first Las Vegas location at ARIA Resort & Casino, diners have a view through floor-to-ceiling windows of Nancy Rubins' Big Edge canoe sculpture and an open kitchen that gives a glimpse of the handiwork involved in preparing the steamed pork soup dumplings, precisely made with 18 lucky folds, 16 grams of meat and 5 grams of dough, which are carefully weighed. In addition to the Shanghai-style soup dumplings, also on the menu are pork chop fried rice, sweet & sour pork baby back ribs, Shanghai rice cakes with Jidori chicken, sautéed Taiwanese cabbage with garlic and chocolate-filled dumpling for dessert.
