Dark tones and surreal detailing --- flying pigs and matte black butterflies --- come together to create a fine dining space that’s theatrical and extraordinarily atypical. Chef David Muñoz and his team push the limits with two set menus offering Iberian and Asian fusion cuisine. The dishes are spectacularly presented on “canvasses” displaying precision and playful creativity while providing a sumptuous assault on all senses. Starters such as steamed carrot dim sum and blu tail noodle soup hint at Muñoz’s extensive experience in Asian-influenced kitchens, and hearty mains of black sesame brioche with pork skin, salmon roe and cherry sauce bring the taste buds firmly back to Iberia. A well-considered wine menu features an extensive list of selections from Spain, as well as farther afield. For a taste of the local terroir, try one of the Gran Reservas from Madrid’s Arganda, Navalcarnero or San Martin de Valdeiglesia wine regions. The surprises keep coming all the way through to dessert, with dulce fusions like strawberries and white chocolate with sweet-and-sour chilli sauce.
