From coastal regions to the Andes high country, Peru’s cooking is incredibly diverse, borrowing from the cuisines of Spain, Italy, China and Japan. This bare-bones setting is a good place to sample it. Start with one of the myriad ceviche, made with a variety of seafood like shrimp, squid, octopus and fresh fish. Several rich, authentic soups are closer to stews, cooked down with beef or chicken, spaghetti noodles, onions, tomatoes and a touch of milk. Most of the entrées include a filet of chicken, beef or fish, stewed, deep-fried or grilled, on a bed of steamed white rice or with french fries. Specialty fried rice options are flavorful and mostly mixed with squid, octopus or shrimp. Desserts include shortbread cookies, milk custard and flan. Try a glass of the chicha morada, Peru’s famous punch tinted with purple corn.
