Located smack dab in the middle of Granville Island, Vancouver's artisanal hub and marina, Edible Canada is one of the city's most distinctive restaurants. If you've ever wondered what Canadian food is all about, the answer is here. The menu has led off with French Canadian pea soup, Thai-style Fraser Valley chicken wings, and Northern Alberta elk tartare. Mains? Bring on poutine made with braised oxtail, Quebec cheese curds, gravy, eggs and onions, and good duck fat fries. A West Coast banh mi is stuffed with crispy fish, pickled carrots, jalapeño peppers, onions and ginger aïoli; the Farmers Harvest is composed of market-fresh vegetables and Canadian grain hummus. BC wild salmon, smoked sturgeon and flank steak are also worthy choices. Consider an all-Canadian blue cheese plate for dessert, or try maple bourbon/Honey Crisp apples topping roasted granola, heavy cream and maple sugar. The all-Canadian wine list has selections spanning the Maritimes to Vancouver Island. Or you might opt for a cool cocktail, such as the Pacific Storm that combines Screech (a Maritime rum), spiced maple syrup, lemon and ginger ale made with local spirits. Service is friendly and knowledgeable. If you're driving an electric car, there's a prime parking spot out front complete with a charging station.
