Fleming's Prime Steakhouse & Wine Bar Restaurant Review:
After the success of the P.F. Chang’s franchise, Paul Fleming --- the original P.F. --- and William Allen, III, designed Fleming’s around Prime corn-fed meats and a notable wine program. American boutique wines as well as renowned national and international labels constitute a large trove of offerings. Some 100 wines by the glass and an 80-label reserve list enhance the wine service. Fleming’s rib-eye steaks, filets and New York strip steaks are seared by intensely high-heat cooking to achieve the signature outer crust. Paleo dieters can satisfy their requirements with dishes such as shrimp and scallops, scampi-style with spaghetti squash. Seafood choices include Pacific swordfish and broiled lobster, served simply with drawn butter. Besides beef, double-thick pork chops, glazed with Creole mustard and accompanied by a julienne of apples and jícama, merit consideration. Small plates feature New Zealand petite lamb chops and New Bedford scallops. Among the rich appetizers are tenderloin carpaccio, pan-crisped pork belly, and lump crab cakes with a lime butter sauce. Sides range from predictable to creative: blue cheese mashed potatoes and creamed spinach to chipotle cheddar mac ‘n’ cheese and rosemary-garlic cipollini.
