Director of Il Vino in the 7th arrondissement, Enrico Bernardo also owns this restaurant on the first floor of Elephant Paname, an art and dance center near the Palais Garnier. The man who was appointed the best sommelier of the world when he worked at the George V naturally displays his passion through the wine list, profuse with French as well as Italian suggestions, and more. At the stoves, he has enlisted a young Spanish chef, Jose Manuel Miguel Rodriguez, who notably worked with Eric Frechon at Hôtel Le Bristol and crafts a creative cuisine distinguished for its original juices, emulsions and Mediterranean accents. The concept of the restaurant is based upon the pairings of food and wine --- guests choose their dishes and the sommelier selects the right references to go with them. The 2004 Bouchard Finlayson Crocodile’s Lair Chardonnay from New Zealand showcases an aroma of grilled bread with the roast sea bass served with courgettes spaghetti in cockle cream, and turns slightly syrupy with the farm egg in ham and onion-flavored broth. As for the other pairings, a Fine de Claire oyster is plunged in Bloody Mary sauce; and the 2010 Gobelsburg Grüner Veltliner Steinsetz from Austria accompanies tuna tartare with mango, egg and Albufera rice with mouthfuls of clams and squid in lemon juice. The melting filet mignon of Bellota ham, with pumpkin cream, mustard and chorizo pasty, is allied with a glass of 2008 Pittacum Mencia from Spain, while the dessert, a chocolate and hazelnut millefeuille, is matched with a Graham’s ten-year-old tawny port.
