William Pilz was a former chef for Elizabeth Falkner’s Citizen Cake restaurant in San Francisco and now owns and operates Hapa SF. Pilz grasps the simple classics---egg roll-like lumpia, pork head-laden sisig and vinegar-stewed chicken adobo---and adds a particularly Californian depth of flavor and freshness with the use of ingredients sourced from farmers markets. With a nod to the traditional Mexican taco truck format that houses Hapa SF’s meals on wheels, sisig makes an appearance in a standout taco, a sort of Filipino answer to Mexico’s tacos de cabeza (head tacos).
