Hoppe's Garden Bistro was ahead of its time when it began serving wine country cuisine and showcasing local, farm-fresh products, and that’s still the cornerstone of this destination restaurant. Signature dishes include a Cayucos red abalone appetizer, a grilled flat-iron steak with Parmesan, and bouillabaisse, but the seasonal nature of the menu means that even regulars will find new tastes, such as a pizza bianco with ham and arugula, seared salmon with wasabi mashed potatoes, or duck-stuffed chile rellenos. For dessert, go over the top with bread pudding with house-made croissants (from the bakery in back, which also serves casual breakfasts and lunches), or pull it back a bit with fresh sorbets. The expansive and always slightly changing wine list is no surprise --- take full advantage of it with one of the three prix-fixe menus.
