Many years ago, Jae Chung brought contemporary Pan-Asian cuisine to the South End when he opened his bright, modern flagship. Today, the restaurant is owned and operated by executive chef Shun Chen, who diligently maintains the tradition of Jae’s. The place’s hallmark is its enormous menu that hop-scotches across Korea, Thailand and Japan. Of course, since breadth takes priority over depth, simple staples (dumplings, spring rolls) greatly outnumber obscure, complex specialties, from sushi and tempura to noodles and rice dishes; even the lengthy list of designer maki will look fairly familiar to the sushi-savvy. Such simplicity generally ensures solid execution, too. Don’t miss the signature hot stone bibim bab, a hot pot combo of vegetables and marinated beef or chicken with a side of seaweed salad.
