Chef José Andrés has captured the spirit of jaleo, which means merrymaking or a vibrant Andalusian dance, with his flavorful tapas. The Bethesda location, larger and prettier than the DC site, manages to look Spanish, thanks to several artful contrivances, such as an almost-opaque wall hanging with a Spanish motif. Its airiness comes from large French windows that allow the light to pour in. But rather than the décor, everyone focuses on the assorted tapas paraded out from the kitchen in a sort of frenzy.

Seasonal tapas include tripe stew with chickpeas, rabbit in a dried fruit sauce, or the grilled lamb chops with rosemary. Menu standards include garlic shrimp that are really garlicky (you'll need plenty of the chunky bread for the butter), duck with orange sauce, and our favorites, the grilled chicken with green sauce and the fried potatoes with aïoli and spicy tomatoes. Eating here is rather like joining in a Spanish festival, so the name really fits.
